Ingredients


2 slices sourdough bread

1 avocado

2 small tomatoes, sliced

feta cheese, crumbled

red onions, thinly sliced and marinated in a drop of olive oil, vinegar, salt, and a pinch of sugar

2 sunny side up eggs, optional

salad dressing, optional, for drizzling

Directions


  • Toast the sourdough until golden and crispy.
  • Mash the avocado and spread generously on the warm toast. Top with sliced tomatoes, crumbled feta cheese, and marinated red onion.
  • If desired, top with a sunny-side-up egg.
  • Drizzle with your favorite dressing for an instant upgrade. Serve immediately.
